Pit beef, the trail

Baltimore pit beef at six stands, in two trips: Illegal Tender, Chaps and Baltimore Beef Man in the city on the third Friday of the month, then drives out to the county for Pioneer's shack, Jake's tents by a stream and MeatMan's sit-down. Beef off charcoal, sliced when you order, and when to catch each one.

Updated Sep 30, 2026 · each stop says the day its sources were read, and what they left unconfirmed

This is pit beef as Baltimore sells it: beef cooked over charcoal and sliced when you order, off Illegal Tender's folding table on a Remington pavement, from Pioneer's shack behind a liquor store, or under Jake's tents on Falls Road. Only one of the six is a sit-down and half publish no hours at all, so the trail is built around what is fixed: a third Friday in the city, and lunchtime in the county.

Do it as two trips. The city half hangs on a date, because Illegal Tender only sets up at its fixed spot on the third Friday of the month, so start there, cross town to Chaps, the one most people name, and end with the Baltimore Beef Man brothers if they have a date that day. The county half is three separate drives, each one a lunch: west to Pioneer, north to Jake's and southeast to MeatMan.

Before you go

  • The city half needs the third Friday of the month, the one day Illegal Tender is outside Mount Royal Soaps, 10am to 2:30pm. A night market runs at the same address that evening, 5 to 9pm, April to November. Whether the stand works both, or the daytime spot in winter, is not published, so aim for lunch between April and November.
  • Baltimore Beef Man keeps no weekly schedule and works one date at a time. Treat it as a bonus, not the reason for the day.
  • Chaps opens at 10:30am every day but Christmas, Thanksgiving and Easter, and publishes no closing time. Pioneer and Jake's publish no hours of their own. Go to all three in daylight, and early rather than late.
  • MeatMan opens Thursday to Sunday only, from 11am, and is shut Monday to Wednesday.
  • The county half needs a car: Pioneer is about nine miles west of the harbor, Jake's about fourteen north, MeatMan about twelve southeast. Bring cash for Pioneer, and carry some on the whole trail, since none of the others says how it takes payment.

In the city: a third Friday, built around the stand that only exists then

    Illegal Tender Pit Beef

Start with the stop that picks the date. Illegal Tender is three friends, Mike, Rich and Matt, with a charcoal grill, a slicer and a folding table, and it is pit beef at its plainest: cooked over charcoal and sliced the moment you order. They work crawls, festivals and night markets, but the fixed spot is the pavement outside Mount Royal Soaps in Remington on the third Friday of the month, 10am to 2:30pm. That is twelve days a year, so the rest of the city half is built around it. Come at lunch, then head across town.

Not confirmed: Payment, age and access. Whether the daytime pop-up and the evening market are both worked, and whether the daytime one runs through the winter, since only the market's April to November season is published. Festival and night market dates go up as they come.

Hours: Third Friday of the month, outside Mount Royal Soaps. Their own bio gives 10am to 2:30pm. Visit Baltimore lists them as a food vendor at the Mount Royal Soaps Night Market the same evening, 5 to 9pm, and says that market runs April to November. Whether they trade straight through both, or work one and not the other, is not published anywhere. Other appearances follow whatever event they are working. · full listing

    Chaps Pit Beef

Then out to the Pulaski strip for the famous one. Chaps is the pit beef from Diners, Drive-Ins and Dives, and still the answer most people give when you ask where to get it: beef on charcoal, shaved to order onto a roll with raw onion and tiger sauce. There are three Chaps now, and this one on Mapleton Avenue is the original, which is the reason to come here rather than to the others. It opens at 10:30 every day but three holidays and publishes no closing time, so make it the afternoon stop, not the evening one.

Not confirmed: Closing time. The 9pm sits in the page's code, not its text, and the text says it varies. Payment, parking, age and access too. Chaps publishes none of them.

Hours: Opens 10:30am every day except Christmas, Thanksgiving and Easter. The page text says closing varies by location and to call ahead on 410-483-2379. The same page's hidden markup gives 9pm, the same for all three Chaps, and Google also lists 9pm. Nobody has checked that at the door. · full listing

    Baltimore Beef Man

End with the brothers, if they have a date that day. Christopher and Patrick McArdle work a drum smoker out of Locust Point, and at the stand it is a grill, a slicer, and beef or turkey shaved onto a Martin's roll with onion and horseradish. No sides, no drinks, and straight after Chaps it makes a useful comparison. They set up at Cheese Galore and More on South Charles Street and at Pickett Brewing on Paca Street in Pigtown, and turn out for Ravens pregames. There is no weekly slot, so count them as a bonus.

    Pioneer Pit Beef

The county half is three drives, not one trip. The first goes west to Rolling Road in Windsor Mill, about nine miles from the harbor, to a wooden shack behind a liquor store with the woodpile out front. The pit is charcoal, the beef is sliced to order, and The Baltimore Banner named it one of five to try in July 2026. It is the trail with nothing added: a shack, a pit and a woodpile. Pioneer publishes no hours of its own, so make it a weekday lunch, go before three, and bring cash.

    Jake's Grill

The second drive runs north up Falls Road, about fourteen miles, to the prettiest stop on the trail: pits under tents beside the road, and picnic tables down by the stream. There is pit beef, grilled chicken and sausage, and The Banner put it first of its five in July 2026. EatOkra lists it as Black-owned. It shuts mid-afternoon, so this is lunch and never dinner: take the sandwich down to the tables by the water and eat it there, which is the whole reason for the drive.

    MeatMan Pit Beef & Catering

The last drive goes southeast onto the North Point peninsula, about twelve miles out, for the one sit-down on the trail. MeatMan does the fuller meal the roadside stands skip: a pit beef sandwich at $13.28, plus ham, turkey, Italian sausage and pulled pork, with smoked beans, potato salad and mac alongside. Pit Master Darrick caters as well. It opens Thursday to Sunday from 11am and is shut the other three days, so save it for the end of the week. It stays open latest on a Thursday, to 6:30.
