Handmade Italian pasta on Albemarle Street for three decades, and since Luca Useli took over from chef Carlo Vignotto a few years ago, a slow turn toward his native Sardinia: culurgiones, the island's potato, pecorino and mint ravioli, and spaghetti finished with bottarga. The fish comes in whole and is filleted in the kitchen. Pasta runs $25 to $38.
