Branzino in Baltimore
Eleven rooms serve it, from a Greektown counter at $27.95 to a butterflied whole fish on Key Highway at $48. Every plate here was read off the restaurant's own menu, with the date on each row, and the one firsthand exception says so. Prices are what each menu prints; fish this honest moves with the market.

Worth knowing: Ouzo Bay is gone, and Ouzo Beach in Fells Point is where its branzino lives now. Loch Bar's sea bass is Chilean, a different fish. Little Italy runs thinner than its name suggests: Aldo's has closed, and La Scala and La Tavola print only a fish of the day.
